Recipe: Blue Oyster Duxelles

Duxelles is a mix of finely chopped mushrooms, shallots and herbs that are sautéed in butter, and reduced to a paste. It is a basic preparation used in many mushroom stuffings and sauces (most notably, it is used in Beef Wellington)

Try using Duxelles on pizza, toast, with red meat or as a filling for raw pastry-baked as a savory tart.

 

Here is a quick and easy recipe for Blue Oyster Duxelles that works particularly well with blue oysters.

Ingredients:

2 cups chopped fresh blue oyster mushrooms

1/2 cup chopped fresh shallots

3 Tbsp. Unsalted Cabot butter

Dash of Maine Sea Salt

Dash or Domino Sugar

Drizzle of Kikkoman soy sauce, to taste

1 Tbsp. fresh thyme leaves

1 Tbsp freshly chopped garlic

1 Tbsp freshly grated ginger

Directions:

Sauté shallot in butter until transparent. Add mushrooms and cook until liquid evaporates and the mixture becomes thick. You should end up with about 1 cup of duxelles.

Use immediately or freeze.
